Cheesecake
Ingredients
- 1 pre-baked shortcrust base
- 375 g quark
- 150 g sugar
- 1 egg
- 50 g flour
- 300 g milk
- 50 g melted butter
- zest of 1 lemon
- 1 sachet of vanilla sugar
- 1 pinch of salt
Baking requires a great deal of intuition and patience - good things take time.
Preparation
Work the butter into crumbs with warm hands. Add the sugar, flavourings and egg, then quickly knead in the flour. Shape the dough into a ball, wrap in foil and chill for about 1 hour. Then roll it out and line the baking tin with it. For the filling, mix all ingredients together and pour the mixture onto the shortcrust base. Pre-bake at 180 °C so the dough keeps its shape, then reduce the temperature during baking.
Alternatively, top with seasonal fruit before baking or, halfway through the baking time, once the surface turns lightly golden, spread an almond mixture (e.g. for Bienenstich) on top.
Note: the almonds should turn golden during baking.
